Last night C, K and I headed to town for dinner. Nick was fatigued from the day, so he stayed back and ordered a pizza. Actually, I ordered it for him. Actually, the front desk ordered it for me. After that the three of us caught a cab to Cochina Caramba. On the way we passed a meat market with the slogan of “Let us handle your meat.” Maybe I’ll be able to snap a photo to go along with the “Welcome Back Door Guests” pic.
At the restaurant Kristen started wondering aloud what ceviche is. Moments later the waiter dropped off a complementary house appetizer, snapper ceviche!! It was very similar to salsa, finely chopped vegetables flavored with herbs and served with a side of chips. The tortilla chips here are very good. They are deep gold in color, thick and some mystery seasoning on them. I tried wondering aloud what conche (pronounced conk) is, but I didn’t get a free appetizer. I ordered the conche in garlic butter. It was fantastic. It was kind of chewy like calamari, but it had a crab or lobster flavor, especially as it marinated in the bath of garlic butter. It came with coconut rice and beans, which was also tasty. Curtis also the conche, but he went for blackened which was spicy. Kristen enjoyed the lobster fajitas. We all washed down our dinners with smoothies, banana, watermelon and pineapple.

We caught a cab the minute we walked out of the door and headed back to the hotel, where we found Nick computing in the lobby. I headed back to our condo right away and finished up reading the chapters for todays dives, fish identification and multilevel diving.
Today was another perfect day. 80s and not a cloud in the sky, but still pretty windy. We were up early again today. C, K and I had breakfast at Rico’s. Curtis had the banana pancakes again, Kristen and I branched out and tried the french toast. After breakfast Nick and I headed to the dive shop for our navigation and fish identification dives. After our dives, Kristen, Nick and I walked to the corner market to get some Dramamine so Nick wouldn’t get sick on the 2 1/2 hour boat ride to the blue hole, which he and Curtis are diving at tomorrow. Curtis was off windsurfing so the rest of us set up shop by the pool. Curtis joined us shortly after and we lounged around for the remainder of the afternoon. Then we did another trip to the dive shop to confirm the boys’ blue hole dive for tomorrow and our jungle boat adventure for Wednesday. Since then we’ve just been chillin’ in the room. The boys are showering and we’ll be off to dinner soon.
